Flaming Greek Cheese (Saganaki)

Ingredients

  • 6 oz Casseri or Halloumi cheese - cut into 1/2" slices, chill in ice water
  • 3 Tbsp butter
  • 1/4 cup flour
  • 1/4 cup bread crumbs
  • 1/4 cup Cognac
  • 1 lemon - cut in half

Directions

  1. Dust cheese slices with flour and bread crumbs

  2. Melt butter into hot cast iron skillet until it sizzles and the majority melts (no browning).

  3. Add cheese slices gently and let them start to brown lightly. Do not overcook or it will melt and stick to the pan.

  4. Flip the cheese with a spatula.

  5. Once flipped, gently pour cognac into the middle of the pan all at once. Let cognac get hot and gently shake the pan. Use a long-tip lighter to light the dish. Flame will go straight up. Allow flame to burn out by turning off the heat.

  6. Squeeze lemon juice into skillet and serve immediately with pita chips.
