Cucina! Cuncina! Chopped Salad

Ingredients

  • 1 head iceberg lettuce, chopped
  • 1 2/3 c diced cooked chicken
  • 4 roma tomatoes
  • 5 oz dry salami, chopped
  • 2/3 c grated mozzarella cheese
  • 1/2 c grated provolone cheese
  • 1 8.5-oz can garbanzo beans
  • 1 bunch fresh basil, chopped
  • 1 bunch green onions, chopped
  • 1 egg yolk (dressing begins here)
  • 1 T water
  • 1 T minced garlic
  • 1/2 t salt
  • 1 t pepper
  • 1/2 t dry mustard
  • 2 t oregano
  • 1/2 t sugar
  • 1/3 c red wine vinegar
  • 2 T lemon juice
  • 1 c olive oil

Directions

  1. Combine egg and water with whisk. Microwave for 15 seconds, then 5 seconds more. Rewhisk and let sit for 1 minute. Blend garlic, egg. Dijon, salt, pepper, mustard, oregano, sugar, vinegar and lemon juice. Add olive oil by blending slowly. Pour over salad and toss.
