Cucina! Cuncina! Chopped Salad

Ingredients
- 1 head iceberg lettuce, chopped
- 1 2/3 c diced cooked chicken
- 4 roma tomatoes
- 5 oz dry salami, chopped
- 2/3 c grated mozzarella cheese
- 1/2 c grated provolone cheese
- 1 8.5-oz can garbanzo beans
- 1 bunch fresh basil, chopped
- 1 bunch green onions, chopped
- 1 egg yolk (dressing begins here)
- 1 T water
- 1 T minced garlic
- 1/2 t salt
- 1 t pepper
- 1/2 t dry mustard
- 2 t oregano
- 1/2 t sugar
- 1/3 c red wine vinegar
- 2 T lemon juice
- 1 c olive oil
Directions

Combine egg and water with whisk. Microwave for 15 seconds, then 5 seconds more. Rewhisk and let sit for 1 minute. Blend garlic, egg. Dijon, salt, pepper, mustard, oregano, sugar, vinegar and lemon juice. Add olive oil by blending slowly. Pour over salad and toss.
