Ingredients
- 5 quartered red onions
- 2 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 6 thyme sprigs

Toss together red onions, olive oil, vinegar, salt and pepper in a 12-inch cast-iron skillet; add thyme sprigs. Cover tightly with foil. Bake at 450, 15 minutes. Uncover and stir. Bake, uncovered, until caramelized, 15 to 20 minutes.
