Ingredients
- 1/4 cup panko
- 1/4 cup grated Parmesan
- 2 tsp chopped fresh thyme
- 1 tsp chopped fresh sage
- 1 tsp minced garlic
- 1/2 tsp lemon zest
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper
- 2 acorn squash
- 1 tbsp. olive oil
Directions

Stir together panko, Parmesan, thyme, sage, garlic, lemon zest, kosher salt, black pepper and crushed red pepper. Halve squash lengthwise; discard seeds. Cut halves into thirds; place on a baking sheet. Brush olive oil; sprinkle with panko mixture. Bake at 425 until golden brown, about 35 minutes.
