Rice Flour Chapati

Serves 4 people
Ingredients
- 2c Rice Flour
- 1c Onion, chopped
- 3 Tbsp Cilantro, chopped
- 1 Serrano Pepper, chopped
- 1 Tbsp Ginger, grated
- 1 tsp Cumin Seeds
- 3/4 tsp Salt
- 1 Tbsp Yogurt
- 1/4c Coconut, unsweetened shredded
- Oil
Directions

In large bowl, mix all ingredients except oil.

Place 1/4 tsp oil in pan on medium to medium-high heat.

Roll 2" ball of dough. Flatten into circle.

Place flattened dough into pan. Cook 3-4 minutes per side. Pressing down during cook time.

Note: You can use parchment paper as base to flatten ball onto for easy transfer into pan.
