Oven-Fried Spicy Honey Chicken

Ingredients

  • 2 tbsp. unsalted butter
  • 4 bone-in skin-on chicken breasts
  • 4 tsp kosher salt, divided
  • 1 cup all-purpose flour
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 tbsp. honey
  • 2 tbsp. unsalted butter, melted
  • 1 tsp ground red pepper
  • 1/2 tsp chili powder
  • Garnish: chopped fresh parsley

Directions

  1. Preheat oven to 425. Place butter in a 13×9-inch baking dish, and place dish in oven to preheat for 5 minutes.

  2. Sprinkle chicken with 2 tsp salt. In a shallow dish, whisk together flour, onion powder, garlic powder, pepper, and remaining 2 tsp salt. Dredge chicken in flour mixture, shaking off excess. In preheated dish, carefully place chicken in an even layer, skin side down.

  3. Bake for 10 minutes. Turn; increase oven temp to 500, and bake until cooked through and skin is golden brown and crispy, about 20 minutes more.

  4. In a small bowl, stir together honey, melted butter, red pepper, and chili powder. Brush chicken with honey mixture. Garnish with parsley.
