Ingredients
- Crumb Topping:
- 3/4 all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp kosher salt
- 8 tbsp butter, cut into small pieces
- Apple Filling:
- 2 tbsp butter
- 5 Granny Smith apples, peeled, cored and thinly sliced
- Pinch of kosher salt
- 2 tbsp packed brown sugar
- 2 tbsp cornstarch
- 1 tbsp vanilla extract
- Juice of 1/2 lemon
- Vanilla ice cream, for serving

Preheat oven to 350.

First, make the crumb topping: In a medium bowl, combine the flour, brown sugar, granulated sugar, cinnamon, nutmeg and salt and whisk it together. Add the butter and use a pastry cutter to mix it together until the mixture resembles coarse crumbs.

Make the apple filling: In an 8-inch cast-iron skillet, melt the butter over medium heat. Add the apples slices and salt and cook for 3 minutes, stirring gently but constantly. Add the brown sugar, cornstarch, vanilla and lemon juice. Keep cooking the apples for another minute, until they’re just slightly soft. Turn off the heat.

Sprinkle the crumb topping over the apples and make sure it’s distributed evenly. Cover the skillet with foil and bake the crisp for 15 minutes, then remove the foil and bake for 25 minutes more, until it’s delightfully crisp and golden.

Serve it while it’s still warm with vanilla ice cream.
