Roasted Peppers and Cauliflower

Ingredients

  • 1 medium head cauliflower, broken into florets
  • 2 medium sweet red peppers, cut into strips
  • 2 small onions, cut into wedges
  • 2 tbsp. olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp. grated Parmesan
  • 1 tbsp. minced fresh parsley

Directions

  1. Place the cauliflower, red peppers and onions in a shallow roasting pan. Add the oil, salt and pepper; toss to coat. Roast, uncovered, at 425 for 20 minutes. Stir; roast until vegetables are tender and lightly browned, about 10 minutes longer. Transfer to a serving bowl; sprinkle with Parmesan and parsley.
