Ingredients
- 4 chicken breasts
- Salt and pepper
- 2 tbsp. olive oil
- Onion, chopped
- 2 tbsp. tomato paste
- 2 lbs. fresh spinach
- 2 tbsp. garam masala
- 1 cup half-and-half
- Rice, cooked
Directions

Cut chicken into 1-inch pieces. Season them with salt and pepper. Place olive oil in a large pan over medium.

Brown the chicken pieces on all sides until cooked through, 8-10 minutes. Remove; set aside.

In the same pan, saute onion in a little more oil until it’s translucent. Stir in tomato paste.

Add spinach by the handful, stirring until it’s all wilted. Add garam masala. Saute for 8 minutes.

Stir in half-and-half. Add the chicken back and heat until warmed through. Season with more salt and pepper and serve over rice.
