Ingredients
- 4 center-cut bacon slices
- 1/4 cup sliced shallot
- 1 tbsp. all-purpose flour
- 1 cup chicken stock
- 2 tbsp. sherry vinegar
- 1 tbsp. unsalted butter
- 1 tsp fresh thyme leaves
Directions

Cook bacon in a skillet over medium-low until crispy. Set bacon aside, reserving drippings in skillet. Add shallot to skillet; cook over medium 2 minutes. Add flour; cook, stirring, 1 minute. Add chicken stock and sherry vinegar; simmer until thickened, 3 to 5 minutes. Remove from heat; stir I’m butter, thyme, and crumbled bacon.
