Ingredients
- 1/2 cup oil-packed sun-dried tomatoes
- 1/2 cup chopped toasted walnuts
- 2 tbsp. olive oil
- 1 tbsp. reserved tomato oil
- 1 tbsp. chopped thyme
- 1 tsp white wine vinegar
- 1/2 tsp orange zest
- Pinch of sugar
- Mascarpone
- Crackers
Directions

Drain sun-dried tomatoes; reserve the oil. Chop the tomatoes and mix with walnuts, olive oil, reserved tomato oil, chopped thyme, vinegar, orange zest and a pinch of sugar. Spread mascarpone on crackers and top with the sun-dried tomato relish.
