Sun-Dried Tomato Relish

Ingredients

  • 1/2 cup oil-packed sun-dried tomatoes
  • 1/2 cup chopped toasted walnuts
  • 2 tbsp. olive oil
  • 1 tbsp. reserved tomato oil
  • 1 tbsp. chopped thyme
  • 1 tsp white wine vinegar
  • 1/2 tsp orange zest
  • Pinch of sugar
  • Mascarpone
  • Crackers

Directions

  1. Drain sun-dried tomatoes; reserve the oil. Chop the tomatoes and mix with walnuts, olive oil, reserved tomato oil, chopped thyme, vinegar, orange zest and a pinch of sugar. Spread mascarpone on crackers and top with the sun-dried tomato relish.
