Spinach-Feta with Red Peppers

Ingredients

  • 10 oz. package frozen spinach, thawed and drained
  • 1/2 cup plain Greek yogurt
  • 2 tbsp. olive oil
  • 2 tbsp. chopped parsley
  • 2 tbsp. chopped dill
  • 2 tbsp. chopped scallions
  • Salt and pepper
  • 1/2 cup crumbled feta
  • Crackers
  • Roasted red peppers, diced

Directions

  1. Pulse hull spinach with Greek yogurt, olive oil, parsley, dill and scallions in a food processor; season with salt and pepper. Stir in crumbled feta. Spread on crackers and top with red peppers.
