Bacony Spinach and Artichoke Dip

Ingredients

  • 1 slice bacon, cooked, chopped
  • 7 oz. jarred or canned artichoke hearts, drained, coarsely chopped
  • 3 oz. fresh spinach, chopped
  • 2 garlic cloves, minced
  • 3 tbsp. minced shallot
  • 1/4 cup mayo
  • 2 oz. cream cheese, softened
  • 1/4 cup shredded mozzarella
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • Crackers, for dipping

Directions

  1. Spray crock with nonstick spray.

  2. In a bowl, mix together all of the ingredients, then place them into the crock.

  3. Cover and cook on LOW for 3 hours.

  4. Serve with crackers for dipping.
