Greek Lemon Chicken Salad

Ingredients
- 4 Chicken Breasts, cooked, shredded
- 1 cucumber, chopped
- 4 ounces Feta cheese, crumbled
- 4 tomatoes, chopped
- 1 red onion, sliced
- 1/2 cup black olives or Kalamata olives
- 3 cups mixed lettuce leaves
Directions

Place all ingredients in a bowl.

To make dressing combine the following dressing ingredients in a jar; shake well.

Pour over salad.

Serve.

2/3 cup light olive oil

1 clove crushed garlic

juice from 1 lemon

1 t Greek seasoning
