Ingredients
- 1 shallot, chopped
- 1 small apple, peeled and diced
- 1 tsp chopped thyme
- Pinch of salt
- Butter
- Prebaked phyllo shells
- Crumbled blue cheese
- Chopped parsley
Directions

Saute shallot, apple, thyme and a pinch of salt in butter until soft, about 8 minutes. Divide among the phyllo shells; top with blue cheese. Bake at 375 until melted, about 15 minutes. Top with chopped parsley.
