Spinach-Goat Cheese Mini Phyllo Cups

Ingredients

  • 1/3 cup frozen spinach (squeezed dry)
  • 4 oz. cream cheese
  • 2 tbsp. mayo
  • 2 tbsp. grated Parmesan
  • 1 garlic clove
  • Prebaked phyllo shells
  • Sliced grape tomatoes
  • Crumbled goat cheese

Directions

  1. Pulse spinach, cream cheese, mayo, Parmesan, and garlic in a food processor. Divide among the phyllo shells. Top with sliced grape tomatoes and crumbled goat cheese. Bake at 375 until the cheese softens, about 15 minutes.
