Ingredients
- 1/2 cup unsweetened coconut cream
- 1/2 cup creamy peanut butter
- 2 tbsp. soy sauce
- 1 tbsp. sambal oelek
- 1 tbsp. rice vinegar
- 1 tbsp. honey
- 2 tsp grated peeled fresh ginger
- Kosher salt
- Chopped peanuts and fresh cilantro, for topping
- Cucumber spears and carrot sticks, for serving
Directions

Puree the coconut cream, peanut butter, soy sauce, sambal oelek, vinegar, honey, ginger and 1/2 tsp salt in a blender until smooth.

Transfer to a bowl and top with peanuts and cilantro. Serve with cucumbers and carrots.
