Ingredients
- 3 tbsp coconut oil or butter melted (42 gr)
- - 3 eggs
- - 1 medium zucchini (220 gr) or 1 cup unsweetened applesauce
- - 1 tsp vanilla or peppermint extract
- - 1/4 tsp salt
- - 1/2 tsp baking powder
- - 1/2 cup flour - I used whole wheat (60 gr)
- - 2/3 cup cocoa powder (64 gr)
- - 6 tbsp sugar (72 gr)
- - 6 tbsp chocolate chips (84 gr)

Preheat oven to 350F and line a 9×9 pan with parchment and grease. Blend the eggs, melted coconut oil and peeled chopped zucchini in a food processor. Add all else other than chocolate and process until smooth. Add the chocolate and pulse until broken down. Bake for 25-30 minutes until mostly done. Makes 9 big slices, enjoy!
