Broccoli Rice

Ingredients

  • 12 oz. bag fresh broccoli florets
  • 2 tbsp. butter
  • 1/4 cup minced onion
  • 2 large garlic cloves, minced
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp. fresh lemon juice
  • Lemon wedges

Directions

  1. Working in batches, pulse broccoli florets in a food processor until very finely chopped.

  2. Heat butter in a large skillet over medium-low heat. Add onion; cook, stirring, until softened, about 3 minutes. Stir in garlic; cook 30 seconds. Stir in broccoli, salt and pepper. Reduce heat to low; cook, covered, until broccoli has softened, about 5 minutes. Pour in lemon juice and toss to combine. Serve with thinly sliced lemon wedges.
