Ingredients
- 1 large onion
- 1 lb. ground beef
- 1/3 cup panko
- 1 egg, beaten
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 cup sliced mushrooms
- 2 tbsp. cornstarch
- 2 tbsp. water

Halve onion vertically, then thinly slice.

Finely chop enough onion slices to fill 1/4 cup, then gently combine with beef, panko, egg, salt and pepper in a bowl. Shape into 4 patties about 3/4 inch thick.

Cook patties in a large skillet over medium heat until browned on both sides, about 10 minutes. Add onion slices, broth and mushrooms; bring to a boil. Reduce heat to medium-low and simmer, covered, about 10 minutes, or until cooked through. Transfer patties to a platter and cover with foil.

Bring mushroom mixture to a boil. Stir together cornstarch and water in a small bowl, then stir into skillet. Cook, stirring, until thickened and bubbly; then cook, continuing to stir, 2 minutes more. Pour over patties to serve.
