Ingredients
- 18-oz. tube polenta
- Vegetable oil, for frying
- Flour, for coating
- Salt
- Grated Parmesan

Cut polenta into 1/2-inch-thick rounds. Heat 1/4 inch of oil in a large nonstick skillet over medium-high heat. Coat the polenta in flour and fry in batches until golden brown, 3-4 minutes per side. Drain on a rack; sprinkle with salt and grated Parmesan.
