Ingredients
- 1 3/4 cups water
- 1 1/4 cups distilled white vinegar
- 3 tbsp. sugar
- 2 tbsp. kosher salt
- 1 tbsp. coriander seeds
- 1 tbsp. yellow mustard seeds
- 1/2 tsp red pepper flakes
- 1 bay leaf
- 2 garlic cloves, crushed
- 2 turnips
- 3 carrots
Directions

Combine water, vinegar, sugar, kosher salt, coriander seeds, yellow mustard seeds, red pepper flakes, bay leaf, and garlic in a saucepan and bring to a boil; simmer 2 minutes. Let cool. Cut turnips into thin wedges and carrots into sticks; put in a bowl or jar and pour in the cooled brine. Let sit 4 hours.
