Quick Veggie Pickles

Ingredients

  • 1 3/4 cups water
  • 1 1/4 cups distilled white vinegar
  • 3 tbsp. sugar
  • 2 tbsp. kosher salt
  • 1 tbsp. coriander seeds
  • 1 tbsp. yellow mustard seeds
  • 1/2 tsp red pepper flakes
  • 1 bay leaf
  • 2 garlic cloves, crushed
  • 2 turnips
  • 3 carrots

Directions

  1. Combine water, vinegar, sugar, kosher salt, coriander seeds, yellow mustard seeds, red pepper flakes, bay leaf, and garlic in a saucepan and bring to a boil; simmer 2 minutes. Let cool. Cut turnips into thin wedges and carrots into sticks; put in a bowl or jar and pour in the cooled brine. Let sit 4 hours.
