Ingredients
- 2 cups white vinegar
- 2 cups sugar
- 2 cups water
- 2 tbsp. kosher salt
- 1 tbsp. plus 1 tsp red pepper flakes
- 2 tsp fennel seeds
- 2 tsp coriander seeds
- 1 lb. ramps or green onions, roots removed, cleaned
Directions

In a small saucepan over medium heat, bring all the ingredients except the ramps to a boil. Lower the heat and simmer for 2 minutes.

Place the ramps in a large bowl and pour the pickling liquid over them. Cool to room temp. Transfer the pickled ramps to an airtight jar and refrigerate. These will keep, refrigerated, for up to 1 month.
