Pickled Green Tops

Ingredients

  • 2 cups white vinegar
  • 2 cups sugar
  • 2 cups water
  • 2 tbsp. kosher salt
  • 1 tbsp. plus 1 tsp red pepper flakes
  • 2 tsp fennel seeds
  • 2 tsp coriander seeds
  • 1 lb. ramps or green onions, roots removed, cleaned

Directions

  1. In a small saucepan over medium heat, bring all the ingredients except the ramps to a boil. Lower the heat and simmer for 2 minutes.

  2. Place the ramps in a large bowl and pour the pickling liquid over them. Cool to room temp. Transfer the pickled ramps to an airtight jar and refrigerate. These will keep, refrigerated, for up to 1 month.
