Garlic Confit Jam

Ingredients

  • 1 cup garlic cloves, peeled, from 2 to 3 heads
  • 1 sprig fresh thyme
  • 1 cup olive oil
  • 1 cup vegetable oil

Directions

  1. Preheat the oven to 350.

  2. In a small ovenproof saucepan or Dutch oven, place the garlic, thyme, and both oils. Cover and bake for 45 minutes to 1 hour until the garlic is golden brown and tender.

  3. Remove from the oven. When the cloves are cool enough to handle, squeeze the garlic from the skins into a bowl. Cover and reserve. Pour any remaining oil into a separate bowl and save to brush on burgers or steaks before grilling or use in vinaigrettes.
