Ingredients

  • 1 cup whole kernel corn
  • 1 cup diced jicama
  • 3/4 cup chopped seeded tomato
  • 2 green onions, sliced
  • 2 cans black beans, rinsed and drained
  • 1/4 cup red wine vinegar
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 small clove garlic, crushed

Directions

  1. Toss all ingredients in large glass or plastic bowl.

  2. Cover and refrigerate at least 2 hours, stirring occasionally.

  3. Dressing: mix all ingredients.
