Ingredients
- 1 1/4 C flour
- 1/4 t seafood seasoning
- 1 egg beaten
- 3/4 C pineapple juice
- shredded coconut
- shrimp, peeled and deveined
- oil for frying
- sauce for dipping

mix flour, seasoning, egg and pineapple juice until smooth

put coconut in small bowl

dip shrimp into batter, then coconut

fry shrimp in oil for 1 1/2 minutes or until golden brown
