Air-Fryer Roasted Veggies

Ingredients

  • 3 cups tender vegetables (zucchini, summer squash, sweet pepper, mushrooms, cauliflower, asparagus), or firm veggies (new potato, carrot, turnip, parsnip, winter squash, celeriac, sweet potato), cut into 1-inch pieces
  • 2 tsp vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp Roasted Veggies Seasoning, such as Italian seasoning, Herbes de Provence, smoked paprika, or Gremolata (1/2 cup chopped fresh parsley, 2 tsp lemon zest and 2 minced garlic cloves)
  • Roasted Veggies Dipping sauces (see recipe)

Directions

  1. eat air fryer to 360. Add vegetables, oil, salt, pepper and desired Seasoning to a bowl. Toss to coat; arrange in fryer basket.

  2. Cook tender vegetables 10 minutes, stirring after 5 minutes. Cook firm vegetables 15 minutes, stirring every 5 minutes. Serve with Dipping sauce.
