Ingredients
- 2 egg whites
- 1 cup panko
- 1/2 cup shredded or grated Parmesan
- 1/2 tsp dried basil
- 1/4 tsp ground red pepper
- 1 lb. fresh asparagus, trimmed
- Cooking oil, for spraying
- Herb Lemon Dip (see recipe)

In a shallow bowl, beat egg whites until frothy. In another shallow bowl, combine panko, cheese, basil, and red pepper. Dip asparagus spears in egg whites, letting excess drip off. Dredge in panko mixture, gently shaking off excess.

Working in batches of 10, spray asparagus with oil, and place in air fryer basket. Set temp to 400, and cook for 6 minutes. Repeat with remaining asparagus. Serve warm with Herb Lemon Dip.
