Ingredients
- 1 lb. carrots, cut diagonally into 1/4-inch-thick slices
- 1/2 lb. ground beans, trimmed
- 1 oz. package ranch dressing mix
- 2 tbsp. olive oil
- 1 tbsp. chopped fresh parsley
- 1/2 tsp kosher salt
- 1 garlic clove, minced

Preheat oven to 400. Line a large baking sheet with parchment paper.

In a large bowl, stir together all ingredients until coated. Place in an even layer on prepared pan.

Bake until tender, about 20 minutes. Serve immediately.
