Ingredients
- 1 lb. chicken breasts, cut into 1-inch cubes
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp pepper
- 4 tbsp. butter, divided
- 2 large onions, sliced
- 1/2 cup lemon juice
- 1/4 cup minced fresh cilantro
- Hot cooked rice
Directions

Sprinkle chicken with salt, cumin and pepper. In a large skillet over medium heat, cook and stir the chicken in 2 tbsp. butter until no longer pink. Remove and keep warm.

In the same skillet, saute the onions in remaining butter until tender and golden brown. Return chicken to the pan. Stir in lemon juice and cilantro; bring to a boil. Serve with rice.
