Ingredients
- 1/2 lb. pork tenderloin
- 2 tbsp. seasoned bread crumbs
- 1 tbsp. grated Parmesan
- 1/4 tsp salt
- Dash pepper
- 2 tsp canola oil
- 1/4 cup sliced onion
- 1 garlic clove, minced
Directions

Cut pork into four slices; flatten to 1/4-inch thickness. In a large shallow dish, combine the bread crumbs, cheese, salt and pepper. Add pork, one slice at a time, and turn to coat.

In a large skillet over medium heat, cook pork in oil until cooked through, 2 to 3 minutes on each side. Remove and keep warm.

Add onion to the pan; cook and stir until tender. Add garlic; cook 1 minute longer. Serve with pork.
