Pressure-Cooked Saucy Italian Chicken

Ingredients

  • 4 chicken breast halves
  • 14.5 oz. can diced tomatoes, undrained
  • 12 oz. jar marinated quartered artichoke hearts, undrained
  • 2 tsp Italian seasoning
  • 3/4 tsp garlic salt
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan

Directions

  1. Place chicken in a pressure cooker. Top with tomatoes, artichokes, Italian seasoning and garlic salt. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 10 minutes. When finished cooked, allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure as directed. Sprinkle with the cheeses before serving.
