- 1/2 cup crumbled blue cheese
- 1/4 cup chopped flat-leaf parsley
- 1/4 cup buttermilk
- 1/4 cup mayo
- 2 tbsp. cider vinegar
- 4 cups thinly sliced cabbage
- 1 1/2 cups thinly sliced red bell pepper
- 1 cup shredded carrot
- 1/4 cup salted roasted sunflower seeds
Directions

Whisk blue cheese, parsley, buttermilk, mayo and vinegar in a large bowl. Add cabbage, bell pepper, carrot and sunflower seeds; toss to coat.
