Blue Cheese-Veggie Slaw

Ingredients

  • 1/2 cup crumbled blue cheese
  • 1/4 cup chopped flat-leaf parsley
  • 1/4 cup buttermilk
  • 1/4 cup mayo
  • 2 tbsp. cider vinegar
  • 4 cups thinly sliced cabbage
  • 1 1/2 cups thinly sliced red bell pepper
  • 1 cup shredded carrot
  • 1/4 cup salted roasted sunflower seeds

Directions

  1. Whisk blue cheese, parsley, buttermilk, mayo and vinegar in a large bowl. Add cabbage, bell pepper, carrot and sunflower seeds; toss to coat.
