Sauteed Broccoli with Peanut Sauce

Ingredients

  • 8 cups steamed broccoli florets
  • 2 tbsp. toasted sesame oil
  • 1 cup sliced red bell pepper
  • 1/2 cup sliced onion
  • 1 tbsp. chopped garlic
  • 3 tbsp. peanut butter
  • 2 1/2 tbsp. tamari
  • 2 tbsp. rice vinegar
  • 1 tbsp. brown sugar
  • 1 tsp cornstarch
  • 1 tbsp. toasted sesame seeds

Directions

  1. Heat sesame oil in a skillet over medium-high heat. Add bell pepper, onion and garlic; cook, stirring, until softened, about 3 minutes. Add the broccoli; cook, stirring, for 3 minutes. Whisk peanut butter, tamari, vinegar, brown sugar and cornstarch in a bowl until smooth. Add to the pan and cook, stirring, until the sauce thickens, about 1 minute. Sprinkle with sesame seeds.
