Broccoli Salad with Sherry Vinaigrette

Ingredients

  • 8 cups steamed broccoli florets
  • 1/3 cup olive oil
  • 2 tbsp. sherry vinegar
  • 2 tbsp. fresh thyme
  • 1 tsp Dijon
  • 1 tsp honey
  • 3/4 tsp salt
  • 1/2 cup sliced red onion
  • 1/2 cup shaved Parmesan
  • 1/4 cup toasted chopped pecans

Directions

  1. Cool the broccoli in ice water. Drain and dry. Whisk olive oil, vinegar, thyme, Dijon, honey, and salt in a bowl. Add the broccoli and red onion and toss to coat. Let stand 15 minutes. Top with Parmesan and pecans.
