Ingredients
- 1 tbsp. balsamic vinegar
- 1 tsp olive oil
- 1 tsp dried oregano
- 1/2 tsp minced garlic
- 1/4 tsp salt
- 2 chicken breast halves
- Pesto:
- 1/4 cup loosely packed basil leaves
- 1/4 cup packed fresh parsley leaves
- 1/4 tsp salt
- 1/4 cup canned coconut milk

Preheat oven to 350. Combine the first 5 ingredients; brush over the chicken. Place in a greased 8-inch square baking dish. Bake until cooked through, 20-25 minutes.

Meanwhile, place basil, parsley, and salt in a small food processor; pulse until chopped. While processing, gradually add coconut milk in a steady stream until mixture is pureed. Serve with chicken.
