Classic Mashed Potatoes

Ingredients

  • 2 1/2 lbs. russet potatoes, peeled and cut into 2-inch cubes
  • Kosher salt
  • 1 stick unsalted butter, cut into pieces
  • 1 cup half-and-half, plus more if needed
  • Black pepper

Directions

  1. Put the potatoes in a large pot and cover with water by 1 inch; season with salt. Bring to a simmer over medium heat and cook until the potatoes are tender, about 15 minutes. Drain well.

  2. Return the pot to low heat. Add the butter and half-and-half. Mash the potatoes into the pot. Season with 2 tsp salt and black pepper and stir until smooth.
