Tuscan Mashed Potatoes

Ingredients

  • Classic Mashed Potatoes (see recipe)
  • 1/2 garlic clove
  • 1/8 cup chopped parsley
  • 1 tbsp. Dijon
  • 4 tbsp. softened butter
  • 4 oz. pancetta, chopped

Directions

  1. Combine garlic, parsley and Dijon in a mini food processor and pulse until mostly smooth. Add butter and process until smooth. Cook pancetta in a skillet, stirring, until crisp, 5-7 minutes; drain. Top mashed potatoes with the pancetta and dollops of the herb butter.
