Ingredients
- Classic Mashed Potatoes (see recipe)
- 1 tbsp. butter
- 1 tbsp. olive oil
- 1/2 lb. cremini mushrooms, sliced
- Salt and pepper
- 1 tsp flour
- 1 tbsp. Worcestershire
- 1 1/2 tsp sherry vinegar
- 1/2 cup chicken broth
- 1 tbsp. butter, chopped
- Crumbled blue cheese
- Chives, chopped
Directions

Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms; season with salt and pepper. Cook, tossing, until tender, about 5 minutes. Stir in flour, then Worcestershire and sherry vinegar; bring to a simmer. Stir in chicken broth and simmer until thickened, 3 to 6 minutes. Off the heat, stir in chopped butter; season with salt. Top mashed potatoes with the mushrooms, blue cheese and chives.
