Steakhouse Mashed Potatoes

Ingredients

  • Classic Mashed Potatoes (see recipe)
  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • 1/2 lb. cremini mushrooms, sliced
  • Salt and pepper
  • 1 tsp flour
  • 1 tbsp. Worcestershire
  • 1 1/2 tsp sherry vinegar
  • 1/2 cup chicken broth
  • 1 tbsp. butter, chopped
  • Crumbled blue cheese
  • Chives, chopped

Directions

  1. Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms; season with salt and pepper. Cook, tossing, until tender, about 5 minutes. Stir in flour, then Worcestershire and sherry vinegar; bring to a simmer. Stir in chicken broth and simmer until thickened, 3 to 6 minutes. Off the heat, stir in chopped butter; season with salt. Top mashed potatoes with the mushrooms, blue cheese and chives.
