Avocado BLT Slaw

Ingredients

  • 4 bacon slices
  • 1 tsp vegetable oil
  • 1 red onion, sliced
  • Salt and black pepper
  • 14 oz. bag coleslaw mix
  • 3/4 cup sliced radishes
  • 3/4 cup halved cherry tomatoes
  • 1/2 cucumber, chopped
  • 1 avocado
  • 3/4 cup buttermilk
  • 1/2 cup fresh parsley
  • 2 tbsp. chopped chives
  • Juice of 1/2 lemon
  • 1 tsp kosher salt

Directions

  1. Cook bacon in a skillet with vegetable oil until crisp, about 8 minutes. Drain on paper towels, then crumble. Add red onion to the drippings, season with salt and pepper and cook 2 minutes; let cool. Combine coleslaw mix, radishes, cherry tomatoes, cucumber and red onion in a bowl. Puree avocado, buttermilk, parsley, chives, lemon juice, kosher salt and black pepper; toss with the slaw. Add the bacon. Chill 30 minutes.
