Ingredients
- 4 bacon slices
- 1 tsp vegetable oil
- 1 red onion, sliced
- Salt and black pepper
- 14 oz. bag coleslaw mix
- 3/4 cup sliced radishes
- 3/4 cup halved cherry tomatoes
- 1/2 cucumber, chopped
- 1 avocado
- 3/4 cup buttermilk
- 1/2 cup fresh parsley
- 2 tbsp. chopped chives
- Juice of 1/2 lemon
- 1 tsp kosher salt

Cook bacon in a skillet with vegetable oil until crisp, about 8 minutes. Drain on paper towels, then crumble. Add red onion to the drippings, season with salt and pepper and cook 2 minutes; let cool. Combine coleslaw mix, radishes, cherry tomatoes, cucumber and red onion in a bowl. Puree avocado, buttermilk, parsley, chives, lemon juice, kosher salt and black pepper; toss with the slaw. Add the bacon. Chill 30 minutes.
