Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1 cup chopped pecans
- 1/2 cup firmly packed dark brown sugar
- 1 tsp kosher salt
- 1/4 tsp baking soda
- 3/4 cup unsalted butter, melted
- Strawberry Jam (see recipe)
Directions
-
Preheat oven to 350. Line a 9-inch square baking pan with parchment paper, letting excess extend over sides of pan. Spray parchment with baking spray with flour.
-
In a large bowl, stir together flour, oats, pecans, brown sugar, salt and baking soda. Add melted butter, stirring until mixture is crumbly. Reserve 1 cup mixture; press remaining mixture in bottom of prepared pan. Spread Strawberry Jam onto crust in pan; sprinkle with reserved 1 cup oat mixture, squeezing together in hands to create clumps.
-
Bake until golden brown and bubbly, 55 minutes to 1 hour. Let cool in pan for 20 minutes; refrigerate until firm, at least 1 hour. Using excess parchment as handles, remove from pan and cut into bars. Refrigerate in an airtight container for up to 2 days.
