Ingredients
- 1 lb. fresh strawberries, hulled and halved
- 1 1/4 cups sugar
- 1/2 cup water, divided
- 1/4 cup fresh lemon juice
- 1/4 cup cornstarch
Directions

In a medium saucepan, bring strawberries, sugar, 1/4 cup water and lemon juice to a boil over medium heat. Cook, stirring occasionally, for 30 minutes. Mash strawberries using a potato masher.

In a small bowl, stir together cornstarch and remaining 1/4 cup water. Add cornstarch mixture to jam, and return to a boil; boil until thickened, about 1 minute. Let cool completely.
