Ingredients
- 1 cup mango, peeled and chopped
- 1/4 cup red onion, chopped
- 1/4 cup fresh cilantro, minced
- 1/4 cup lime juice
- 2 tbsp. fresh mint, minced
- 1 tbsp. fresh gingerroot, minced
- 1/2 tsp olive oil
- 1/4 tsp salt
Directions

Combine mango, red onion, cilantro, lime juice, mint, ginger, olive oil and salt. Let stand 30 minutes before serving.
