Edamame Hummus

Ingredients

  • 16 oz. frozen shelled edamame, thawed
  • 1/2 cup tahini
  • 1/2 cup water
  • 1/3 to 1/2 cup lemon juice
  • 2 garlic cloves, minced
  • 1 tsp sea salt
  • 1/4 cup olive oil
  • 1/4 cup minced fresh mint
  • 2 jalapenos, seeded and chopped
  • Assorted fresh veggies
  • Rice crackers

Directions

  1. Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add remaining ingredients. Process until smooth, 1-2 minutes. Serve with assorted fresh veggies and rice crackers.
