Ingredients
- 16 oz. frozen shelled edamame, thawed
- 1/2 cup tahini
- 1/2 cup water
- 1/3 to 1/2 cup lemon juice
- 2 garlic cloves, minced
- 1 tsp sea salt
- 1/4 cup olive oil
- 1/4 cup minced fresh mint
- 2 jalapenos, seeded and chopped
- Assorted fresh veggies
- Rice crackers
Directions

Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add remaining ingredients. Process until smooth, 1-2 minutes. Serve with assorted fresh veggies and rice crackers.
