Kasha “Kupecheskaya”

Ingredients

  • Buckwheat (Kasha)(8oz)
  • Hard boiled Eggs (3)
  • Mushrooms (1 lb)
  • Onions (2)
  • Salt (1/2 teaspoon)
  • Water (16oz)

Directions

  1. Place 1 cup buckwheat in rice cooker with 2 cups water and salt. Cover and cook

  2. While buckwheat is cooking, cut onions and mushrooms

  3. Hard boil eggs, use grater turn eggs to crumbs

  4. Combine eggs, onions and mushrooms in frying pan, mix and fry for 5-10 minutes

  5. Add this mix into the cooked buckwheat, add salt if needed and mix

  6. Cover and let to stay for 15 minutes before serving

  7. Comments:

  8. You can serve this kasha with mayonnaise (on a side or mixing)

  9. For day two on rotation diet: Serve with side of broccoli and cauliflower.
