Ingredients
- 1/2 cup fresh cilantro leaves
- 1/3 cup olive oil
- 1/4 cup shredded Parmesan, plus more for topping
- 3 tbsp. fresh lemon juice
- 2 tsp chipotle hot sauce
- 1 garlic clove, peeled
- 2 hearts of romaine, chopped
- 2 cups Cilantro Rice (see recipe)
- 1 container shredded Garlic and Coriander Roasted Chicken (see recipe)
- 1 can corn kernels, drained

In mini food processor, puree cilantro, oil, 1/4 cup cheese, lemon juice, hot sauce, and garlic; season dressing. In large bowl, toss romaine, rice, chicken, corn and dressing; season. Top with more cheese.
