Caribbean Jerk Chicken

Ingredients

  • 1 cup chopped fresh pineapple
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 2 whole Garlic and Coriander Roasted Chicken breasts (see recipe)
  • 1 tsp jerk seasoning
  • 4 cups Cilantro Rice (see recipe)

Directions

  1. In a bowl, toss pineapple, cilantro, and onion; season salsa. Season chicken with 1/2 tsp jerk seasoning. In a large nonstick skillet, cook chicken over medium-high, turning once, until heated through, about 5 minutes. In medium skillet, cook rice, remaining 1/2 tsp jerk seasoning, and 1 tbsp. water over low, stirring once, until heated through, about 3 minutes. Serve chicken with rice and salsa.
