Ingredients
- 3/4 lb. sweet Italian bulk sausage
- 5 tbsp. olive oil
- 5 cups cauliflower rice
- 1 tsp dried oregano
- 1 tsp garlic powder
- 12 oz. rotini, cooked, and 1/2 cup cooking water
- 1/2 cup chopped fresh parsley
- 1 tsp lemon zest

In a skillet, cook sausage in 1 tbsp. oil over medium-high heat, breaking up meat with a spoon, until browned, about 6 minutes. Transfer to a bowl. In the same skillet, cook cauliflower rice, oregano and garlic powder in remaining 4 tbsp. oil over medium-high, stirring often, until crisp-tender, about 4 minutes; season. Stir in remaining ingredients; season.
