- 2 cups Thai sticky rice

Using a fine-mesh strainer, rinse the rice until the water runs clear, about 2 minutes. Transfer to a medium bowl. Add enough cold water to cover the rice by at least 2 inches. Let soak for at least 2 hours or up to overnight. Using the fine-mesh strainer, drain the rice.

Set a footed metal colander inside a pot. Add enough water to the pot to leave 1 inch between the bottom of the colander and the water. Cover and bring to a boil over high heat. Cover with a tight fitting lid. Reduce heat to medium-high. Steam the rice for 15 minutes. Using a rubber spatula, flip the mound of rice over. Cover again tightly and cook the rice until soft but not mushy, about 15 minutes more. Turn the rice out into a serving bowl. Serve immediately.
