Corn and Ham Fritters

Ingredients

  • 1/2 cup mayo
  • 1 tsp hot sauce (such as Tabasco)
  • 1/2 cup corn kernels
  • 1/2 cup finely chopped ham steak
  • 1 egg
  • 1 tbsp. buttermilk
  • 1/2 tsp Dijon
  • 1 cup cornbread mix
  • 3 cups vegetable oil, for frying

Directions

  1. In bowl, whisk mayo and hot sauce for dip; season. In bowl, mix next 5 ingredients. Stir in cornbread mix to make batter. In skillet, heat oil to 350. Working in batches, fry heaping tablespoons of batter, turning often, until browned, about 3 minutes per batch. Serve with dip.
